Slow cooked lamb shanks are perfect for an easy meal for family and friends.

Ingredients
Slow Cooked Lamb Shanks
  • 4 lamb shanks
  • 1 onion sliced or several pickling onions
  • 6 cloves garlic unpeeled
  • 2 tins roma tomatoes chopped
  • 2 tbsp tomato paste
  • 1 fresh or 2 dried bay leaves
  • 1 cup red wine
  • 3 carrots roughly chopped
  • salt and pepper to taste
Garlic Mashed Potatoes
  • 6 potatoes
  • 1 head of garlic for roasting
  • 2 tbsp butter
  • ¼ cup cream
  • salt & pepper to taste
  • 1 tbsp chopped parsley
Instructions
Lamb Shanks
  1. Place onions on bottom of slow cooker and place lamb shanks on top
  2. Add all other ingredients
  3. Stir to combine
  4. Cook on low for 6 to 8 hours
Garlic Mashed Potatoes
  1. Slice top off garlic, brush with olive oil and sprinkle with sea salt and wrap in tin foil and bake for 45 minutes at 350F/180C - cool.
  2. Peel and slice potatoes and place in saucepan of water
  3. Add salt and cook til tender
  4. Drain potatoes
  5. Put potatoes through ricer (or mash)
  6. Add butter in small pieces
  7. Heat cream and add to potatoes
  8. Squeeze out garlic into a bowl and lightly mash and then add to potatoes
  9. Toss in chopped parsley
  10. Mix well and season with salt and pepper
  11. Place mashed potatoes on a plate and top with lamb shank and pour sauce over it.
