Kids love making this sundae because it's ice cream AND it has a face! This recipe requires a waffle cone maker.

Recipe type: Dessert
Cuisine: Australian
Serves: 4
Ingredients
  • 1½ cups cream
  • 1 teaspoon vanilla extract
  • ¾ cups icing (powdered) sugar
  • ¾ cups plain (all-purpose) flour
  • ⅛ teaspoon ground cinnamon
  • Pinch of nutmeg
  • 1½ teaspoon corn flour (cornstarch)
Instructions
  1. Sift everything but the cream and vanilla and set aside.
  2. Whip cream and vanilla until it's like mousse but no peaks.
  3. Add dry ingredients to the cream and make a batter. Set aside for 30 minutes. (I learned the hard way that this is important)
  4. Heat waffle cone maker and brush with a bit of oil if yours needs it.
  5. Add ¼ cup of batter in the center and close the cover and cook until browned.
  6. Open the cone maker and with a non-stick spatula, lift the flat turtle and place it over a small upturned bowl.
To make a turtle sundae
  1. Place one scoop of ice cream on a serving dish and place the turtle shell over it. Use Candies for feet, licorice for a tail and a small scoop of ice cream for the head. Use licorice for eyes, nose and mouth.
  2. Add spoon.
