Stove Top Pizza

one pan pizzaThe cooking club I joined recently has pizza as this month’s challenge.  I decided that I’d share how we make pizza at home.  Nothing fancy, nothing special and sadly, nothing orgasmic but it’s pizza and what’s not to love about pizza?

Years ago I went to a cookware party.  I KNOW, I can hear you groaning from all the way at your house.  I did the same thing when my friend Julie said, “Oh Maureen, I need another bum on the seat, you don’t need to buy ANYTHING, I promise, please say you’ll come?”

My friend Julie has her photo in the dictionary under “hell on wheels” and nobody would say no to her.  She would share her last cent with you, would dig in your garden for hours just because you needed a hand and would drink the last beer in the fridge with wild abandon.  Everyone needs a Julie in their life.

So I went.  The name of the company is Chef’s Toolbox and it had just started selling its wares in Australia.  They’ve since gone on to sell in New Zealand and in the US too.  This is NOT a sponsored post so don’t leave now.  I’m really heading to something good.

Their range of cookware and bakeware and utensils are all sold through a party plan and they do that so people can see how the cookware works.  All the parties are about cooking and eating and the most requested dish is the stove top pizza.  I was definitely NOT going to buy anything at this party.  I didn’t need a thing in my kitchen.

The demonstrator or whatever the consultants are called put the pan in front of us, dumped in self raising and plain flour, a teaspoon of honey, a pinch of salt, a heaping teaspoon of yeast and a cup of warm water and started mixing.  I thought she was nuts.

The dough came together and then she patted it out with her fingers, spread the pizza sauce over it, added the cheese and the toppings and put it on the stove.  It couldn’t have taken 5 minutes.

She cooked it on medium heat for 5 minutes with the vents closed and then opened the vents and cooked for 20 minutes while she went on to make jam doughnuts.

In 20 minutes she opened the cover and BAM it was pizza.

I bought the pan.  In fact, I bought two of them and a bunch of other stuff.  It’s been more than 5 years and my pans still look brand new and are still non-stick.  They aren’t cheap but good knives and cookware are a wise investment.  These pans work equally well on my stove top or my induction cooktop that I used today.

I’ve changed the recipe and the method just a bit but the original recipe works just fine.  I like my pizzas with the cheese golden brown so before I start mixing the dough I put the pizza stone in the oven and turn it on to 230C.  I also add some olive oil to the dough recipe.

Once I open the vents, I cook the pizza on low for 10 minutes until the crust is nicely risen and done, then I use a spatula and the pizza slides right out onto the pizza stone.  5 minutes in the hot oven and the cheese is golden and bubbly.

If you’ve got any kind of a saute pan with a cover, this pizza will work for you.  We have two pans and two pizza stones so pizza is ready in under 30 minutes from start to finish and not much to clean up.

I certainly won’t win this month’s cooking club challenge with this one but everyone needs an easy pizza recipe.

Stove Top Pizza
 
This is a quick and easy method to get pizza on the table in under 30 minutes.
Author:
Cuisine: Italian
Serves: 2

Ingredients
  • 1 cup self-raising flour
  • 1 cup plain flour
  • Big pinch of salt
  • 1 rounded teaspoon of dried yeast
  • 1 teaspoon honey
  • 1 cup lukewarm water
  • 1 tbsp olive oil
  • ⅓ cup pizza sauce (or as much as you like)
  • Any pizza topping ingredients that you like

Instructions
  1. In a non-stick pan with a cover, combine all dough ingredients and mix well.
  2. Once combined, wet fingers with olive oil and press dough evenly across the bottom of the pan.
  3. Add ⅓ cup (or however much you like) of pizza sauce over the base, right up to the edges.
  4. Sprinkle with shredded mozarella cheese or sliced bocconcini cheese
  5. Top with anything you like.
  6. Cook on medium heat with the pan’s vent closed for 5 minutes
  7. Open pan’s vent and cook for an additional 20 minutes
  8. or
  9. Cook with vent open for 10 minutes and then transfer to a hot oven with pizza stone for 5 – 10 minutes until golden brown.

It has really never occurred to me to try making pizza on a stove top. This looks and sounds like a brilliant concept though, and your pizza is gorgeous!

I’d much prefer a pizza made in an outside wood-fired pizza oven but that can take hours to crank up properly. Sometimes you just want pizza in your mouth. :)

Great looking pizza, it’d never occurred to me you could make pizza on the stove top. I agree good knives and pans are essential and if you buy right the initial cost is well worth the years of use you get from them. GG

I’ve not yet made a stove top pizza, though it’s been on my to-do list for years. You have an interesting twist, with mixing the dough right in the pan. Plus using self-rising flour is a real time saver (I actually do keep this in my kitchen, but the White Lily brand which is lower protein than AP, so it’s great for biscuits – I’m not sure if it would be appropriate for pizza). Hi Maureen! Awesome job!! That looks like one delicious pizza. I may have to look for those pans, but in the mean time, I’ll be trying this in my trusty cast iron skillet! Hope you are having a wonderful week!

PS – Can I come to Australia for a cooking and food photography workshop with you? ;-)
PPS – Toffee pieces are sold in the baking aisles here in the US, but crushed toffee bars would do the trick!

Any non-stick pan with a lid works with this pizza. I just happened to learn about this recipe from the people who sold the pan.

It certainly is fast and I imagine with the great toppings you’ve added, very tasty. Whatever works for you. :)

If you can make a pizza using pita bread, french baguettes or bagels, why not a quick bread/biscuit dough in what resembles a cast iron pan/dutch oven? Heck, I’m guessing you could take your pan and do it on a campfire.

Brilliant. I have never heard of such a pizza, but it makes perfect sense to me looking at your photos – and delicious. When I see new ways of doing things, like this, I always wonder why I didn’t think of that myself? Brilliant!

I’ve been invited to many party-plan events and as I’m leaving I always tell my husband, ‘Don’t worry, I won’t buy anything’. And then when I’m there I get sucked in and place the biggest order of the night. Too much champagne probably. Glad you bought some great pizza cookware. That looks like an amazing pizza and I love how the dough is made so very quickly xx

I usually make pizza for dinner on Sunday nights but I have been guilty of forgetting to get the dough going in time. I will most definitely be giving this one a go this weekend. I love that you don’t even have to think of it until half an hour before dinner time!

That is pretty spiffy! I have never cooked a pizza on top of the stove like that, but hey, why not?! I like how quickly it comes together for pizza any night of the week. :)

What a cool pan and what a fantastic looking pizza!!! I’ve never seen a pan like this but I want one! The pizza looks perfectly cooked, like it was cooked in one of those professional pizza ovens! What a great find even though you had to attend one “those” parties to find it. :) I agree – everyone needs a Julie in their lives!

Now this is one great idea: pizza on the stove! I love it; it just seems so much easier to be able to watch the pizza instead of peeking constantly in a hot oven! Looks and sounds delish too!

Seriously?? I have NEVER heard of a cook top pizza before. This is mind blowing. I am not sure I have the kind of pan you have here, but I do have a pizza stone. Wondering if that would work…..never mind. Just knowing that a cook top pizza exists makes me happy.

I do like cookware parties though – especially when they come up such great recipes.

Well damn, that looks like a darn impressive pizza considering it was “baked” on top of the stove. I’ve never tried this cooking method before… will need to give it a crack. The results speak for themselves evidently!

Wow-what a cool idea! I’ve pretty much given up on making my own pizza crust, because I’ve yet to find a good {thin} gluten-free crust recipe. I’m tempted to try your technique though. Looks delicious to me!

I think that pizza looks pretty damn good! I always DREAD cookware parties (or homeware parties, or jewelry parties…) but then I always end up buying something! At least what you bought was useful!
